Guests will be able to choose from a cocktail collection spanning oldies, bitter and floral. The curated menu intends “pull patrons back in time.” Try the Smoked Rosemary Negroni or the Apricot Mezcal Paloma. Not a cocktail girly? Don’t sweat! They have an extensive wine selection to choose from as well.
But now onto their crown jewel: the Shaken Rigatoni Cacio e Pepe. You may order your drinks shaken, but surely never your pasta. Well, at The Ruby, you can order a saucy dish of cacio e pepe, shaken and served right in front of your eyes. The table side service will mix al dente rigatoni with a Cacio e Pepe sauce in a cocktail shaker until perfectly combined. Yet, the masterpiece doesn’t end there. Once served, a staff member will compliment the dish with a torched topper of Pecorino Romano cheese.
In addition to the culinary star, The Ruby also offers raw bar oysters and ceviche, along with Italian influenced appetizers like Tagliere and Fried Burrata.
