Though New York’s iconic Katz’s Delicatessen has been serving up its legendary pastrami on rye bread since 1888, for the past 136 years vegetarians across the city have had to ignore their mouths watering and admire the sandwich from afar. But guess what: all of that is about to come to an end! Well… at least for one day.
This weekend, Katz’s Delicatessen will be partnering with seed-to-table pioneer Row 7 for a one-day-only event that will reimagine Katz’s classic pastrami sandwich in a fresh way: a meatless version!
Katz’s and Row 7 have long been experimenting with a new and unexpected take on pastrami, retaining all of the smoky, complex flavors pastrami eaters know and love—without the cow! Instead, they use Badger Flame beets, a vibrant type of beet bred to express the vegetable’s sweetness without its typical earthy flavor.
Celebrity Chef Dan Barber, who created the sandwich in collaboration with Katz’s owner Jake Dell, will step behind the legendary Katz’s counter to serve up the vegetarian pastrami sandwich for one day only on Saturday, September 28. The Row 7 truck will also be parked outside Katz’s, where Irwin Goldman, the visionary grower of the Badger Flame beet, will be offering samples of the vegetable for the public to try for themselves.
While we wish this had happened sooner, we’re glad it’s happening now! Who knows if it will happen again, though, so if you need us this weekend you know where we’ll be.
