
The gasp we gusped when we saw pickle pizza is now a thing was probably heard all the way in the Upper East Side (we’re in our office in SoHo, for reference). And though we’re constantly begging for our beloved pizza to be left alone–like, who would even think to put pineapple on something so sacred–we’d be lying if we said we weren’t slightly intrigued.
After a couple years in the making, cauliflower crust brand Caulipower recently unveiled their newest creation: a dill pickle pizza. The pizza meshes together tangy dill pickle brine, creamy béchamel, roasted garlic, melty mozzarella, and fresh dill all atop the brand’s iconic stone-fired cauliflower crust. And would you hate us if we said we’d definitely try it?! Caulipower wrote on their Instagram:

Gail Becker, the founder of Caulipower, said that it took two years to come up with the recipe, which was inspired by Jewish delis around Manhattan. Becker and her husband went everywhere from the Upper West Side’s Barney Greengrass to Sarge’s in Murray Hill and, of course, Katz’s on the Lower East Side eating every pickle they could get their hands on, even if it meant walking 17 miles in a day!
They were captivated the most by The Pickle Guys on Essex Street, who have endless pickle options including everything from horseradish and hot sour to sweet gherkins and bread and butter. And they pickle more than just cucumbers there–cabbage, garlic, turnips, onions, watermelon, you name it, they pickle it. In the end it was The Pickle Guys’ garlicky variety pickle that really inspired the recipe for the Dill Pickle Pizza.
Becker was considering at some point making the pizza more deli-like, and toyed with the idea of adding hamburger meat and thousand island dressing as additional toppings, though in the end she decided against this. Sticking to the brand’s philosophy the pizza is gluten-free and free of artificial colors, flavors, and preservatives.
