Por meio de programas como No Reservations, Parts Unknown, The Layover e A Cook’s Tour (entre outros), o mundo assistiu ansiosamente ao chef, autor e documentarista de viagens Anthony Bourdain viajar pelo mundo para descobrir cantos pouco conhecidos do planeta e celebrar diversas culturas por meio da culinária .
E, considerando que Bourdain era um viajante global bastante estabelecido, viajando para todos os lugares, desde a Islândia e o Vietnã até a Tanzânia e o Japão, certamente seria uma grande façanha dizer que você comeu em todos os lugares que ele comeu, como o local de comida de rua de Cingapura, onde ele ficou sem palavras depois de dar uma mordida no frango com arroz, mas os nova-iorquinos podem experimentar essa mesma culinária reconhecida pela UNESCO aqui mesmo em Nova York!
K. F. Seetoh era amigo de Bourdain, tendo-o conhecido dentro e fora das telas por 17 anos e acompanhando-o em sua turnê gastronômica em Cingapura, e Seetoh está dando aos nova-iorquinos um gostinho da mesma comida de rua de Cingapura que deixou Bourdain tão impressionado em seu restaurante Hainan Jones.
Criado pelos imigrantes chineses de Hainan em Cingapura há quase um século, o Singapore Hainanese Chicken Rice é considerado um dos pratos locais mais famosos de Cingapura, portanto, faz sentido que seja a estrela do Hainan Jones. À primeira vista, o prato não parece ser nada de especial. De fato, Bourdain declarou sobre o prato: “Como algo tão feio pode ser tão bom?”
Mas não julgue o prato pela capa – o que falta na aparência, certamente é compensado pelo sabor.
No Hainan Jones, o prato é preparado de três maneiras – escalfado, assado e frito – e todas as três são servidas com arroz e caldo de galinha perfumados e acompanhadas por uma pimenta de limão, molho de soja escuro e gengibre picado. Uma mordida e prometemos que, assim como Bourdain quando experimentou, você só conseguirá murmurar “uau”.
Além do Chicken Rice, o Hainan Jones também serve o Nonya Laksa, uma sopa picante de macarrão ao curry de coco com camarão, tofu e ovo, o Hainan Chicken Curry, servido com um saboroso curry e baguete, e o Tomato HP Sauce Pork Chop Rice, com uma saborosa costeleta de porco sobre arroz com um molho picante.
O Hainan Jones tem duas unidades em Nova York: a recém-inaugurada no DeKalb Market Hall e uma unidade no Urban Hawker, em Midtown, que Bourdain ajudou a idealizar. O conceito é uma colaboração entre a empresa de K. F. Seetoh, Makansutra, fundada para celebrar e promover a cultura da comida de rua tradicional em todo o mundo, e os principais mestres do Chicken Rice de Cingapura.
