New Yorkers are fiercely protective of their bagels, but a Connecticut-born sensation has fully won the city over.
Now, PopUp Bagels is stepping onto the world’s biggest stage. The brand is officially opening a permanent location in the heart of Times Square at 1501 Broadway.
A backyard project turned national sensation
What started as a pandemic passion project in founder Adam Goldberg’s Westport backyard is now a nationwide obsession.
PopUp Bagels opened its first NYC brick-and-mortar in Greenwich Village and quickly built a loyal fanbase. Their intentionally simple approach flipped the classic NYC breakfast routine on its head.
You won’t find traditional sandwiches here. PopUp Bagels serves its bagels hot and whole, strictly by the bag.
They pioneered the Grip, Rip and Dip® method. You simply tear off a piece of a perfectly baked, crispy bagel and plunge it into their epic, rotating schmears.

Exclusive NYC collaborations
To celebrate its massive Broadway debut, PopUp is rolling out some seriously iconic local flavors. Guests can try the new New York Cheesecake Strawberry Schmear.
Even better, they’ve teamed up with the legendary Katz’s Delicatessen to create an Everything but the Pastrami Butter.
The shop will also feature its usual beloved lineup. You can grab Plain, Everything, Poppy, Salt, and Sesame bagels. Classic schmears like Plain and Scallion Cream Cheese, Salted Butter, and Brown Sugar Cinnamon Butter are always on deck.
What to know before you go
The grand opening kicks off on October 16 at 7:00 AM. Early birds will be rewarded.
The massive opening event features a live DJ, exclusive NYC merchandise for the first guests in line, and complimentary beverages from Saint James, La Colombe, and Natalie’s.
The Times Square shop will boast the latest hours of any PopUp location in the city. You can satisfy your bagel cravings daily from 7:00 AM to 9:00 PM.
