Ein Bao, auch bekannt als Dampfbrötchen oder Baozi (包子), ist ein warmes, weiches, fluffiges Brötchen. In der Regel werden sie mit einer Schweinemischung gefüllt – obwohl es im Grunde unendlich viele Füllungsmöglichkeiten gibt – und sind vor allem dafür bekannt, dass sie rund, glatt und weich sind.
Obwohl Baos den Teigtaschen ähnlich sind, unterscheiden sie sich in einigen wichtigen Punkten – Ba o-Brötchen werden gedämpft, während Teigtaschen gekocht oder in der Pfanne gebraten werden, Teigtaschen sind kleiner und Bao-Brötchen werden aus fermentiertem Hefeteig hergestellt, im Gegensatz zu dem Teig, der zur Herstellung von Teigtaschen verwendet wird, der nicht fermentiert ist.

1. Nom Wah Tea Parlor, mehrere Standorte
Der Nom Wah Tea Parlor bedient die New Yorker seit 1920 und musste daher unbedingt einen Platz auf unserer Liste haben. Ursprünglich war der Tea Parlor eine reine Bäckerei, bevor er schließlich auch Dim Sum anbot – etwas, für das wir alle dankbar sind, denn wir können nicht genug von ihren gebratenen Schweinebrötchen bekommen.

2. Goldener Dampfer, Chinatown
Wenn Sie etwas ausgefallenere Bao-Geschmacksrichtungen suchen, werden Sie bei Golden Steamer fündig. Diese kleine Bäckerei in der Mott Street bietet verschiedene Brötchensorten an, darunter geröstetes Schweinefleisch, gesalzenes Eigelb, rote Bohnen und mehr. Eine der beliebtesten Geschmacksrichtungen ist aber wohl das Kürbisbrötchen.

3. Vegetarisches Dim Sum Haus, Chinatown
Dieses Lokal ist speziell für Vegetarier und Veganer gedacht, die den Biss in ein weiches, warmes Schweinefleischbrötchen so sehr vermissen. Die vegetarische Version des Schweinebratens ist köstlich und schmeckt so echt, dass es einem Angst einjagen kann. Wenn es Ihnen so geht wie uns, werden Sie tagein, tagaus von diesen Baos träumen.

4. Mei Lai Wah, Chinatown
Nach Meinung der New Yorker macht Mei Lai Wah einige der besten Schweinebrötchen der Stadt. In diesem Dim Sum-Lokal werden verschiedene Brötchen serviert, darunter gedämpfte und gebackene. Die gedämpften Brötchen enthalten gebratenes Schweinefleisch, Hühnchen, rote Bohnen, Eigelb, und das „große Brötchen“ ist das beste von allen, gefüllt mit Schweinefleisch, Hühnchen, Ei und Wurst.

5. Fu Zhou Wei Zhong Wei Jia Xiang Feng Wei, Chinatown
Dieses Lokal ist nicht ganz einfach zu finden (es befindet sich in der East Broadway Mall), aber für seine Schweinefleischbrötchen lohnt sich die Suche allemal. Die kleinen gedämpften Brötchen (die ironischerweise gar nicht so klein sind) sind zum Sterben schön und mit der köstlichsten Schweinefleischmischung gefüllt. Das Beste daran ist, dass man die Baos in Tüten zu einem unglaublich günstigen Preis kaufen kann und dass es neben den Baos noch andere köstliche Häppchen gibt.
