NYC is about to get a bit cheesy, innit?
You’ve likely seen conveyor belt sushi—but what about a continuous, rotating stream of artisan cheese? One of London’s most beloved, viral dining experiences, Pick & Cheese, is officially crossing the pond to make its highly anticipated New York City debut, and it’s swapping tuna and yellowtail for camembert and gouda.
From a humble British cheese truck to a global cult sensation
The cheesy tale begins back in 2014 when Mathew Carver, a passionate champion of artisan cheese, launched The Cheese Truck—a converted ice cream van serving melty grilled cheese sandwiches at festivals across the UK.
Soon after came The Cheese Barge, a 96-foot floating restaurant moored in London’s Paddington basin, and The Rind, a cheese-focused pizzeria in North Yorkshire. Together, these ventures cemented Carver as one of the UK’s leading champions of independent cheesemakers.
Then, in 2019, Carver dreamed up something the culinary world had never seen before: Pick & Cheese, the world’s first cheese conveyor belt restaurant. Located in London’s bustling Covent Garden, it instantly became an internet sensation, introducing thousands of guests to the best of British cheese, one rotating plate at a time.

Now, it’s NYC’s turn to get cheesy
Now, sights are set on the Big Apple.
Pick & Cheese will be a crown jewel of Shaver Hall, the massive new 35,000-square-foot food hall opening inside the iconic former Lord & Taylor flagship building on Fifth Avenue. Carver told Travel + Leisure:
We definitely felt like New York was the right fit — the restaurant scene is so similar to London. I just wanted to make sure it was done with the same values—sourcing really good American cheese and caring about where it comes from.

What’s on the menu?
Just like its European counterparts highlight local farmers, the NYC Pick & Cheese will fiercely spotlight American artisans, with a heavy emphasis on incredible creamers from the Northeast.
Diners can sit bar-side and watch artisan cheeses glide past on a slow-moving, 200-foot-long conveyor belt—making this the brand’s largest belt in the entire world.
Each plate comes elegantly served under a glass dome, paired with a highly specific, creative accompaniment designed to elevate the flavor profile–think: tomato & chili jam, rose Turkish delight, or rich truffle honey.
