NYC is about to get a bit cheesy, innit? You’ve seen sushi conveyor belts—but what about cheese? One of London’s most beloved (and viral) dining experiences, Pick & Cheese, is crossing the pond and making its long-awaited New York City debut, and it’s swapping tuna and yellowtail for camembert and gouda.
From A Cheese Truck To A Global Sensation
The cheesy tale begins in 2014, when Mathew Carver, a passionate champion of artisan cheese, launched The Cheese Truck—a converted ice cream van serving melty grilled cheese sandwiches at festivals across the UK.
Soon after came The Cheese Barge, a 96-foot floating restaurant moored in Paddington, and The Rind, a cheese-focused pizzeria in North Yorkshire. Together, these ventures cemented Carver as one of the UK’s leading champions of independent cheesemakers.
Then in 2019, Carver dreamed up something the world had never seen before: Pick & Cheese, the world’s first cheese conveyor belt restaurant.
Located in London’s Covent Garden, it quickly became a viral sensation, introducing thousands of guests to the best of British cheese, one rotating plate at a time.

Now, It’s NYC’s Turn To Get Cheesy
After opening a Berlin outpost earlier this year, Pick & Cheese has its sights set on the Big Apple.
The team recently announced plans to open its first U.S. location inside Shaver Hall, the massive 35,000-square-foot food emporium taking over the landmark former Lord & Taylor building on Fifth Ave. Carver told Travel + Leisure:
We definitely felt like New York was the right fit — the restaurant scene is so similar to London. I just wanted to make sure it was done with the same values—sourcing really good American cheese and caring about where it comes from.
Just like its London and Berlin locations highlight local cheesemakers, the NYC Pick & Cheese will spotlight American artisans, especially from the Northeast.
And Carver isn’t taking any shortcuts–he’s already toured regional producers like Hudson Valley’s Four Fat Fowl, known for its buttery St. Stephen triple-cream, and Nettle Meadow Farm in the Adirondacks, home of Kunik, a decadent goat’s milk and cow cream blend. Other producers you’ll find on the lineup include Perrystead Dairy in Pennsylvania and Jake’s Gouda in Upstate New York.

A Cheese Lover’s Dream Conveyor Belt
While there’s no exact opening date yet, Pick & Cheese NYC is expected to open sometime in February 2026.
Diners can expect to watch artisan cheeses glide by on a slow-moving conveyor belt, each elegantly plated under glass domes and paired with creative accompaniments—think: tomato & chili jam, rose Turkish delight, or even truffle honey. As Carver put it:
From the start, Pick & Cheese has been about championing independent cheesemakers. When we decided to bring the concept to the U.S., we wanted to do it in a way that celebrates America’s own cheese culture. The creativity and passion of the makers here is extraordinary, and Shaver Hall is the perfect stage to showcase it.
The menu will also feature made-to-order grilled cheese, baked cheese, sweet treats, and wine on tap. Even more, at 200 feet long this will be the brand’s largest conveyor belt yet!
