Hemlock Neversink might sound like something straight out of a fairytale, and, well, that’s because it pretty much is (though it’s actually named after a local tree and the area’s reservoir).
Located upstate in the stunning Catskill Mountains, about a two hour drive from NYC, this cozy resort is a place to escape reality and frolic within 200+ acres worth of woodsy elegance. It first opened in October of 2023, and it’s since been making quite the name for itself.
The resort is made up of 34 rooms spread across five cabin-like buildings, ranging from single rooms fit for solo travelers to the grand suite complete with two large private deck patios and even a personal treatment room for private in-room spa services.
And even indoors you’ll feel one with nature as the color palette throughout the entire resort practically brings the naturalness of the outside in, with its neutral tones, wooden furniture, and overall simplicity and calmness.
Plus, each window opens up to stunning views of the sprawling greenery-filled property.
What we mainly have our eye on though is all of the activities and wellness services the resort offers–it’s practically like an adult summer camp (but much, much better).
The 230 acre property comes equipped with six miles of trails for hiking and guided nature walks, and we cannot stress enough how much fresher the air smells up there! And keep an eye out because if you get lucky like we did you may stumble upon a family of deer on your trek!
Oh, and let’s not forget, you can even embark on a morning hike with their resident rescue goats (or just hangout with them and feed them at the barn if hiking isn’t really your thing).
There are also tennis courts and a number of creative activity offerings such as terrarium workshops, vision boarding, stargazing and cloud spotting, candle making, pine-needle weaving, and a Catskill honey and tea tasting with a local honey sommelier.
We were lucky enough to catch the Perseid meteor shower during our stay on their stargazing deck, but the night sky up there is just as stunning even without meteors zipping past.
At the spa everything from riverstone massages and detox herbal wraps to scalp massages and custom facials can be enjoyed by guests in any of the spa’s twelve treatment rooms–all which offer stunning views of the surrounding woodlands.
In addition to traditional spa treatments, other wellness offerings include reiki and reflexology, drum circles, yoga, meditation, and dance classes. Or you can simply indulge in some R&R in one of their three saunas or indoor pool and jacuzzi.
Foster Supply Hospitality, the company behind Hemlock Neversink, even earned an “outstanding restaurateur” James Beard nomination earlier this year, and that definitely shows through Bittersweet, the resort’s dimly lit restaurant and bar.
Bittersweet takes a plant-forward approach, offering a prix fixe menu that changes daily and blends mindful eating with a fine dining sensibility–and honestly, each meal was better than the last.
Each four-course dinner begins with a “snack from the kitchen” before leading into dishes such as Roasted Persimmon, Flatbreads, Stews, Dumplings, and Bittersweet Chocolate Mousse. You can also grab snacks from the restaurant after breakfast and lunch if you’re a grazer like we are.
And did we mention that the resort even offers cooking classes?! The classes are led by skilled chefs and nutrition experts and offer guests a unique opportunity to learn the art of preparing nutritious and delicious meals.

During our August stay we crossed paths with frogs, deer, hummingbirds, hundreds of butterflies, and even an owl and spent our nights roasting s’mores by the fire. But we can only imagine how stunning the property itself is during other times of the year–just picture how colorful it looks in the fall with its changing colors or draped in snow in the winter!
