Today is officially International Sushi Day, and if you are anything like us, you don’t need much of an excuse to crave quality seafood. But if you want to go all out and truly celebrate the occasion, we have found the exact counter you need to book.
Tucked inside the Ace Hotel in Brooklyn, Sushi Koju is offering a seriously forward-thinking interpretation of omakase. It is a concept that honors the deep traditions of Japanese cuisine while completely pushing its creative boundaries.
A sensory fusion of taste and sound
Chef Kevin Garrison brings a massive level of authenticity and craftsmanship to the table. However, he is also redefining the typical omakase experience through raw innovation, bold flavors, and exhilarating visuals. Every single element is meticulously designed to create a moment of awe, from the precision of his knife cuts to the gorgeous composition of the plate.

But the experience goes far beyond what you are eating. Sushi Koju heightens the entire meal with a curated vinyl music program. You can expect buzzy, Japanese-inspired tracks played through rare Silence Please speakers. This creates an incredible sensory fusion between taste and sound, inviting you into a space that feels just as soulful as it is refined.
What to expect on the seasonal menu
The 14-course omakase ($165/person) features a rotating seasonal menu that is currently packed with heavy hitters.
You can expect premium, melt-in-your-mouth cuts of Kamasu (baby barracuda), creamy Uni, rich Masunosuke (king salmon), and Hon Maguro (bluefin tuna).
One of the absolute standouts on the current menu is a wildly creative Crab Croquette. It is made with Kegani (hairy horse crab), sake kasu, coconut milk, and Comte cheese. It features a perfectly gooey center covered in crushed rice crackers for the ultimate satisfying crunch.
Make sure you save room for dessert. The meal rounds out with a brilliant Mizunara White Oak Ice Cream, served with Japanese whisky syrup and a sake kasu cookie. To wash it all down, the restaurant also pours a wide variety of sake, wine, beer, and craft cocktails.
