The Eighth, Chelsea’s newest concept, is a cocktail-driven restaurant rooted in atmosphere, ritual, and emotional resonance.
Conceived as a space outside ordinary time, it offers an alternative to the speed and trend-chasing of New York’s nightlife. The experience is intentionally slow and layered, designed to be felt rather than immediately understood.
The Concept: The “Eighth Day”
The name refers to an imagined “eighth day”—a moment outside the conventional rhythm of the week where time slows, allowing for reconnection and presence. I
nspired by Chelsea’s history, the space draws from the “absence of history”—the stories and emotions that have slipped through the cracks.
Inside The Eighth
The design is immersive and sensual, built around themes of mystery and attraction. Materials are tactile and indulgent: velvet and leather banquettes, soft lounge seating, and bar stools designed for lingering.
- The Altar: The bar top is a backlit stone surface, conceived as a ceremonial altar that illuminates cocktails and elevates the act of drinking.
- The Atmosphere: Materials include tactile velvet and leather banquettes, soft chairs, and bar stools. A VIP enclave and DJ booth are wrapped in faux snakeskin leather, while an infinity light mirror above the back bar extends the ceiling visually.
- The Symbols: Two animals recur throughout the design: the Snake (transformation and renewal) and the Moth (attraction and surrender). These motifs culminate in two ungendered restrooms: the Snake and the Moth.
- The Logo: Centered around an hourglass, the logo reimagines time as fluid and ambiguous, suggesting both liquid and sand in motion.

Food & Drink as Ritual
The cocktail menu is structured around time and transformation. Central to the experience are three nightly cocktail and bite ceremonies that mark the progression of the night:

- 8:00 PM: Signals arrival and intention.
- 10:00 PM: Deepens the experience and indulgence.
- 12:00 AM: Opens into the unknown and surrender.
These rituals form a temporal structure where cocktails draw from classic foundations refined through contemporary technique.
The cuisine features small plates designed to complement the beverages, encouraging sharing and lingering.
Together, the menu and ceremonies reinforce the philosophy of drinking and dining as intentional acts.
