Any true New Yorker would agree with one thing: don’t mess with our pizza. Like, pineapple on pizza? Absolutely not. But when it comes to pizza makers in Tokyo putting a Japanese twist on a Neapolitan–a combination many of us may never have thought of–now our interests are piqued. And lucky for us we’ll now get to check it out firsthand in NYC!
Moody Tongue, the ones behind the world’s first two Michelin-Starred brewery in Chicago and Moody Tongue Sushi in the West Village, has announced they’re adding another brick and mortar to their roster with the opening of Moody Tongue Pizza this December.
The pizzeria will feature an à la carte selection of Tokyo-Neapolitan style pizzas to pair with an evolving seasonal selection of 16 draft Moody Tongue beers and a curated list of wines and specialty cocktails.
For those unfamiliar with the concept of Tokyo-Neapolitan pizzas it’s likely not what you think. What we mean by that is that you’re not going to get a pizza topped with sushi or covered in a miso-inspired sauce or anything like that. Rather Tokyo-Neapolitan pizza is defined by “locally sourced wood burned in a locally sourced oven, an extra punch of salt and a delicateness of dough that extends to the tip of the fire-seared crust.”
That’s to say diners that head to Moody Tongue Pizza can expect pies such as Margherita, made with San Marzano tomato DOP, Fior di Latte, 24 month parmigiano reggiano, extra virgin olive oil, and basil, Acciuga, made with Fior di Latte, caper mayo, olive dust, Cantabrian anchovies, lemon zest, and extra virgin olive oil, and the Provola e Pepe, made with Provola cheese, black pepper, 24 month parmigiano reggiano foam, datterino tomato, extra virgin olive oil, and basil.
Chef Vincenzo will also work in collaboration with Moody Tongue Sushi’s Executive Chef Hiromi Iwakiri to develop a selection of Japanese-inspired starters such as a Madai Crudo with winter grapefruit and sea salt.

We are incredibly excited to grow Moody Tongue here in New York City as well as our passion for Japanese-inspired pizza and beer. Our goal is to create delicious beer-centric dining experiences and we couldn’t be more excited to join the East Village community this fall.
