An accidental masterpiece in Greenwich Village
The secret entrance is actually the result of an improvisation. Back in 2019, co-founders Chef Franco Sampogna and Bernardo Silva lost their original restaurant lease. They found a new home at 48 W 8th St, but the space was simply too large for their business plan.
Bernardo suggested turning the front section into an art gallery, hiding the restaurant behind the artwork. What started as a clever solution quickly became the restaurant’s signature identity. It is a spot built for New Yorkers who love the hidden side of the city and want to be “in the know”.
A rotating menu centered entirely around sauces
Once you step through the hidden door, you leave the gallery behind and enter an intimate dining room featuring a 16-seat chef’s counter and two small tables.
Every single detail here moves fast. The name FREVO comes from the Portuguese word ferver, meaning “to boil”. It perfectly captures the constant motion of New York City. The tasting menu, wine pairings, and gallery exhibitions rotate completely every four months. If you return a few months later, you will experience a totally new space.

Chef Franco has built a highly acclaimed identity around sauce-centered cuisine. He roots his plates in classical French technique but infuses them with South American and Asian notes. Here, sauces are not just an afterthought. They take the form of:
- Condiments, jus, foams, or emulsions that bring richness and acidity.
- Artistic color accents that visually unify the plate.
Even better? The tasting menu model is highly sustainable. The kitchen only orders the exact amount of ingredients needed for the night’s guest count, reducing food waste to an absolute minimum.
Democratic, award-winning organic wines
The beverage program is led by General Manager and Beverage Director Quentin Vauléon. He was named the Best Young Sommelier in France in 2017 and took third place at the Best Sommelier of France competition in 2024.
Quentin’s wine list is heavily focused on sustainability, with 95% of the bottles produced using biodynamic practices. The list focuses heavily on European and French landscapes, but keeps things democratic, matching rare finds alongside beloved classics.
